Morning Glory Muffins

INGREDIENTS (makes 12)
• 1 1/2 cups oat flour (easily made by processing old fashion rolled oats in blender)
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon sea salt
• 1/2 teaspoon ground cinnamon
• 1/2 cup raw honey
• 1 1/2 cups unsweetened applesauce (or fresh apples processed in blender)
• 1 teaspoon vanilla extract
• 2 large carrots, finely shredded
• 1/2 cup raisins

INSTRUCTIONS
Heat the oven to 350°F. Line muffin pan with unbleached muffin liners.
In a large bowl, mix the flour, baking soda, baking powder, salt and cinnamon.
Then add the honey, applesauce, vanilla, shredded carrots and raisins.
Stir just until all the dry ingredients are absorbed.
Fill each muffin cup 3/4 full and bake for 18 to 25 minutes, until a toothpick inserted in the center comes out clean.
